Recipe for the Week of 5/22/06

Fried Shrimp Po'Boy (Local Style!)

Ingredients:

  • 5 jumo shrimp, deveined and butterflied
  • 1 hoagie bun
  • lettuce
  • tomato, sliced
  • 1/4 cup coleslaw (see recipe below)
  • 2 tbsp Wasabi ("wah-sah-bee") Cocktail Sauce (see recipe below)
  • 1 cup Panko or bread crumbs
  • 2 eggs
  • 1/4 cup milk
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp pepper
  • 3 cups oil (for frying)

Instructions:

  1. Mix salt and pepper with flour.
  2. Mix eggs and milk together.
  3. Dredge the shrimp in the flour, coating well.
  4. Dip the shrimp in the egg / milk mixture and then coat with panko or bread crumbs.
  5. Heat oil in a wok (or frying pan) to 350 degrees.
  6. Fry shrimp until golden brown (about 3 minutes).
  7. Remove from oil and place on paper towels to dry.
  8. Season with salt and pepper.
  9. Cut hoagie bun in half and place coleslaw on the bottom of the bun, followed by lettuce and tomato.
  10. Place shrimp and top with wasabi cocktail sauce.
  11. Serve and enjoy!

Coleslaw

Ingredients:

  • 1 head cabbage, shredded
  • 1 carrot, julienned
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp vinegar
  • 2 tbsp sugar
  • salt and pepper to taste

Mix ingredients until well blended.

Wasabi Cocktail Sauce

Ingredients:

  • 1 cup ketchup
  • 2 tbsp Wasabi powder
  • 2 tbsp water
  • 1 tbsp shoyu
  • salt and pepper to taste

Mix ingredients together until well blended.
